Super Food Artichoke

Artichoke is among the 10 highest antioxidants-rich foods. It has a reputation for “cleaning the blood by detoxifying the liver and gallbladder, reducing cholesterol and balancing the blood sugars. I chose the jar or canned artichoke hearts because it is not easy to find fresh artichokes in Singapore and also definitely much less work. Jar/can artichoke is as wholesome as the fresh ones. It has a fresh clean taste and the flavor falls somewhere between asparagus and celery. The texture is tender and soft.

I am using dried nutrient-dense cannellini beans with disease-fighting antioxidants and anti-inflammatory properties. It has a mild flavor that matches well in the vegetable artichoke soup with the soft texture of the beans when Cannellini beans retain their shape.

This meal is very suitable for brunch on weekends with guests. Hearty vegetarian high protein soup with rich healthy artichoke quiche complemented with light kale tomato salad with refreshing Ume Shiso seasoning dressing as a side dish.


ARTICHOKES GRUYERE QUICHE

INGREDIENTS:
1 Nine inches Flaky Quiche Crust
6 medium eggs (or 4 Jumbo eggs)
1/4 Cream (Creme Fraiche)
1 jar/can Kitchen & Love Quartered Artichokes in Brine
50gm leek (sliced & white part only)
30gm sweet red pepper (diced)
30gm shallots (diced)
1 Tsp Kitchen & Love Grapeseed Oil
140gm Shredded Gruyere Cheese
60gm Shredded Danish Mozzarella
A pinch of dried Dill
A pinch Black pepper


COOKING INSTRUCTIONS:
1. Roll the crust dough on a lightly dusted baking paper. Flip over on the greased quiche pan. Trim the edge and should have about 1/3 dough left. Put it back to freezer and use it for 6 tartlet other time.
2. Poke the base of crust with fork. Put the whole crust back to refrigerator while preheating the oven to 180C.
3. Place a sheet of baking paper over the frozen/cool pie crust, then fill with pie weights (any dried beans). Blind bake for 10 minutes in preheat oven 180C and then remove the pie weights. Set aside to cool.
4. Sweat the shallots, leek and red pepper with 1 Tsp of Kitchen & Love Grapeseed Oil.
5. Well drained the Kitchen & Love Quartered Artichokes in Brine.
6. Lightly beat the eggs with cream. Straining the egg mixture thru sieve.
7. Mix all ingredients and scope the mixture evenly to the prebaked crust.
8. Baked the quiche in preheat oven 175C for 35 minutes or lightly Golden color.
9. Serve it after 15 minutes out of oven. Serve up to 6 servings.
