Super Food Legumes
Homemade Vegan burgers are very easy to make and much more economical. Black beans, lentils and chickpeas are a few legumes that should be in our diet because they are high in protein and fiber which also lowers high blood pressure, managing diabetes, healthy digestion and preventing cancer. This recipe combination yields a darker color that better replicates the “traditional” burgers. The chickpea flour is the key ingredient to create a firm plant-based burger texture. It absorbs liquid from other ingredients and makes for a burger that holds together when eating. Smoky Chipotle mix gives the burgers a sense of meat with this meatless burger. Natural herbs and spices are important to make our food healthy and tasty.
GRILLED VEGAN PATTIES WITH GLUTEN FREE BAGEL
INGREDIENTS:
Vegan, Gluten free, Diary free and high protein burger patties:
1 can Biona Organic Black Beans (rinsed and drained)
1 jar Biona Organic Brown Lentils (drained)
1/2 Cup Amisa Organic Gluten Free Chickpea Flour
1 medium size red onion (diced)
4 cloves garlic (chopped)
200gm sweet potatoes (boiled or steamed)
Few stalks of fresh thyme
2 Tbsp Gran Luchito Garlic Guajilo Fajita & Taco Mix
2 Tbsp Oil
100gm Fresh Shitake mushrooms (diced)
COOKING INSTRUCTIONS:
1. Stir fry the shitake mushrooms with 1 Tbsp of oil for about 2 minutes. Drained the liquid from the stir fry and set aside to cool.
2. You can use food processor or any blender. If you are using the food processor, use pulse function. I am using handheld blender and chopped the sweet potatoes, red onions, garlic and then coarsely chopped the Biona Organic Brown Lentils, Biona Organic Black Beans and mushrooms.
3. Mixed well the Gran Luchito Garlic Guajilo Fajita & Taco Mix, 1/2 cup Amisa Organic Gluten Free Chickpea Flour and 1 Tbsp of oil to the mixture. Let it rest for at least 5 minutes. Scope half cup of mixture and form it into hamburger patties with about an inch thick and consistent in size. It will yield about 7 patties.
4. You can keep in refrigerator for up to 3 days or freezer up to 3 months.
GRILLED VEGAN BURGER
INGREDIENTS:
4 Vegan Patties
4 Ener-G Plain Bagels (or any sourdough or whole grains Hamburger buns)
Butterhead lettuce (any lettuce)
Red onions (sliced)
Tomatoes (sliced)
The Foraging Fox Smoked Beetroot Ketchup (or any type of sauce of your preference like BBQ, honey-mustard, mayonnaise)
Cheese (optional)
Kitchen & Love Sliced Tri-color Jalepenos or pickles (optional)
COOKING INSTRUCTIONS:
1. Heat the grilled pan with 1 Tbsp of oil, grilled the vegan patties in medium fire for 2-3 minutes each side. Don’t flip it until at least 2 minutes. The patty is firm but not as firm as meat. So, must be gentle when u flip it. Once cooked, the outside of the patty should be light brown with grilled mark.
2. Toast the Ener-G Plain Bagels with the grilled pan or toaster oven.
3. Use the bottom part of the Ener-G Plain Bagels, squeeze/spread sauce of your choice and place the patty on top. Use your creativity to dress the burger to your liking.
Note: Here I am using the gluten free bagel because the chewy texture of bagel compliment well with the vegan patty. And the reason I am using the beetroot ketchup here is because it enhances the taste of the burger and is definitely a much healthier choice compare with other sauce. The jalapeño gives the burger a kick.
