Aurea Fenice sees the light in November 2023 from a fusion of history, territoriality and decades of experience in dealcoholization of wine. Mythology describes “fenice” (phoenix) as a majestic bird, symbol of balance, longevity, rebirth, revenge. And this is the spirit that has always animated Princess, leading it to win a bet made more than 12 years ago by its founder: the partial and total dealcoholization of wines from all the world. The connection with our territory has meant that the first Aurea Fenice product derives from a vine that distinguishes it: Muller Thurgau. This vine is grown mainly in the Val di Cembra, where the calcareous soils, the altitude and the large temperature range of the valley favor the development of unique aromas and freshness in its grapes.
