Jackfruit

Jackfruit is an exotic tropical fruit that has been increasing in popularity in recent years. Ripe Jackfruit has a distinctive sweet flavor and smell which can be used to make a wide variety of desserts especially in baking. It’s also very nutritious and has many health benefits. What makes jackfruit unique from other fruits is its protein content and high levels in a few powerful antioxidants.

Vegan or vegetarian diets often use young Jackfruit which is tasteless as a meat substitute due to its texture, which is comparable to shredded meat. Young Jackfruit meat takes on the flavor of the spices that it is cooked with. The Nori in the Vegan Crab cakes makes every bite taste like the ocean with crab like texture from the jackfruit meat. The tender Jackfruit meat absorbs all the spicy and rich Arrabbiata sauce which blends in so well with the al dente Farfalle pasta. I believe one should eat a wide variety of wholesome food, especially plants.

Jackfruit is a versatile fruit with lots of nutritional health benefits. One can make dessert guilt free and packed with nutritious values.

Papaya

Many don’t like papaya because of its pungent smell. There is a scientific reason for why papaya stinks. Papaya is chock-full of an enzyme called papain, which according to the Enzyme Education Institute has a somewhat offensive smell and “unpleasant” taste. Experts have found that papaya has antibacterial properties and promotes good digestion and wound healing. It also improves lactation in new mothers and relieves menstrual pain. Green unripe papaya helps to reduce the risk of heart disease.

All these three recipes will change your perspective over the “not so popular” papaya in your list. One should consume more papaya since we can get it easily in Singapore especially when it is packed with nutritious goodness.

Laksa

A simple bowl of Singapore laksa reminds me of my childhood. My mother used to cook a big pot of aromatic laksa at Sunday's family gathering. My late mother was a resourceful person and she believed in wholesome cooking which meant using the freshest ingredients and making them from scratch.  I remembered that I was helping to de-shell the fresh cockles which was one of my favorite toppings. Unfortunately, this time I couldn't find any fresh cockles. You can use cockles if you can find some fresh and good ones.

Laksa can be healthy and delicious if you use the right ingredients. Quality ingredients make a huge difference in creating an aromatic and delicious clean taste with umami flavour Laksa. I know many people use yellow noodles but I hope you are adventurous enough to try the Biona white spaghetti which is made of Durum wheat and alpine water. Much healthier and al dente texture noodles in an aromatic bowl of laksa soup. It is a mind-blowing experience to make these small changes. I am sure you will fall in love with it.

Chili Crab

Celebrate the National Day month of August with a truly Singaporean National dish. Chili crab has been promoted by the Singapore Tourism Board as one of Singapore’s National dishes. I remember chili crab was one of my mother’s special dishes too.  As the years flew by, I have recreated this Fragrant Blue Ginger Classic Chili crab which is mildly spicy, and has a sweet yet savory flavour with the fresh succulent crab meat. Best served with any breads but I recommend these traditional leaven rolls which are crispy on the outside and fluffy and soft inside, which is supremely satisfying.

Wholesome and healthy traditionally baked rolls dipped in fragrant Chili crab tangy gravy are the way to go.

Wishing Singapore a happy 56th birthday!

Remedies - Eczema

Many people who have eczema are also diagnosed with food allergies. However, everyone is different and discovering your personal food needs is important to minimize issues with allergies and eczema.

Eating anti-inflammatory foods may help lessen or reduce eczema symptoms. This includes eating fatty fish, such as sea bass, cod, salmon and herring. Fish oil contains high levels of omega-3 fatty acids, which are anti-inflammatory. Fresh vegetables and fruits especially apples, winter melon and cauliflower contain flavonoid which is also a powerful antioxidant and antihistamine. Probiotic food such as miso contain live cultures that help support a strong immune system. This may help reduce flare-ups or allergic reactions. Truffles help to regulate immune functions which is good news for anyone who has an immune-related skin issue like psoriasis or eczema. In addition to their distinct taste and aroma, truffles are also highly nutritious, rich in antioxidants and may possess antibacterial, anticancer and anti-inflammatory properties. Black truffles also have the remarkable ability to fade forms of hyperpigmentation like age spots, acne scarring, and freckles.

Foods considered to be eczema-friendly may trigger a flare-up in those who are allergic to them. There isn’t a one-size-fits-all eczema diet, though eating a diet rich in antioxidants may help reduce symptoms.

Remedies - Heartburn

One of the most common causes of heartburn is called gastroesophageal reflux disease (GERD). Most people with this problem eat too much spicy food or have irregular eating hours due to busyness. Many years ago, I had this problem after my eldest was born. Thank God for wisdom to apply some of these remedies in my daily diet and trying to eat small meals at fixed hours. Eating bland tasting food is not the solution to heartburn. I recommend you increase your consumption of foods that fight acidity because they are a healthy alternative. If you eat these foods daily, you can gradually achieve a normal pH in your stomach without any abrupt changes, but still produce the level of acidity needed to promote good digestion.

A hot cup of ginger tea with honey or molasses after each meal really helps me. Today I am sharing with you one of my favorite Keto dishes that does have a hint of spice but not spicy which really helps one’s acid reflux problem. This meal is low fat because I am using lean meat and a roasting method with an oven or air fryer. It is a wholesome low carb meal too with the roasted Mustard Yogurt Cauliflower and Toasted Pine Nut French Beans. This Mustard Turmeric Yogurt sauce that I curated is the remedy for cooking a meal suitable for people with heartburn. Mustard is full of minerals and a weak acid and contains alkaline which neutralizes the stomach acid. Yogurt has a soothing effect that helps keep stomach discomfort at bay. It also contains probiotics, a type of good bacteria found in the digestive tract that gives a boost to your immune system.

Remedies - Fatigue

Breakfast is the most important meal of the day. Research shows that breakfast provides many health benefits especially maintaining one’s energy level throughout the day. Low energy may arise when one has a poor diet or under significant stress. Being mindful of what you eat can be an effective way to keep your energy level up.

These 2 recipes are my family’s favorite energy boosters which I find simple to make and it’s also a well-balanced diet for all ages. A bottle of Firefly Revitalize drink, which has green tea and Yerba mate, can help to boost energy and improve mental focus throughout the day. Do avoid taking refined sugar. Natural sugar found in food is a better choice and is good for boosting energy.

Remedies - Menstruation

During the menstruation cycle, it is common to experience fatigue and craving for rich and greasy food. The reason is because our body is giving us the signal that we need more nutrients and energy. We should however avoid greasy and spicy food during this period.  The two recipes that I am sharing for this week are super simple and easy to make especially when one doesn’t feel like doing anything.

One should eat salmon which is high in Omega-3s fatty acids and can reduce the intensity of period pain, and stop your craving for greasy food. It is common to experience a dip in your iron levels during your period, particularly if your menstrual flow is heavy. This can lead to fatigue, bodily pain, and dizziness. Leafy spinach can boost your iron level and is also rich in magnesium which can lessen the fatigue symptoms. The pasta sauce is light and creamy and matches well with the delicate nutty taste of the pasta which is made of Spelt flour and spinach.

We should avoid high sugar foods but usually we will crave chocolate during this period. So, I strongly recommend this Mint Chocolate Shot that comes with natural fruit extracts to relieve your PMS symptoms. Mint can relieve menstrual cramps and nausea by balancing the hormones.
