Laksa

A simple bowl of Singapore laksa reminds me of my childhood. My mother used to cook a big pot of aromatic laksa at Sunday's family gathering. My late mother was a resourceful person and she believed in wholesome cooking which meant using the freshest ingredients and making them from scratch.  I remembered that I was helping to de-shell the fresh cockles which was one of my favorite toppings. Unfortunately, this time I couldn't find any fresh cockles. You can use cockles if you can find some fresh and good ones.

Laksa can be healthy and delicious if you use the right ingredients. Quality ingredients make a huge difference in creating an aromatic and delicious clean taste with umami flavour Laksa. I know many people use yellow noodles but I hope you are adventurous enough to try the Biona white spaghetti which is made of Durum wheat and alpine water. Much healthier and al dente texture noodles in an aromatic bowl of laksa soup. It is a mind-blowing experience to make these small changes. I am sure you will fall in love with it.

Chili Crab

Celebrate the National Day month of August with a truly Singaporean National dish. Chili crab has been promoted by the Singapore Tourism Board as one of Singapore’s National dishes. I remember chili crab was one of my mother’s special dishes too.  As the years flew by, I have recreated this Fragrant Blue Ginger Classic Chili crab which is mildly spicy, and has a sweet yet savory flavour with the fresh succulent crab meat. Best served with any breads but I recommend these traditional leaven rolls which are crispy on the outside and fluffy and soft inside, which is supremely satisfying.
 
Wholesome and healthy traditionally baked rolls dipped in fragrant Chili crab tangy gravy are the way to go.

Remedies - Heartburn

One of the most common causes of heartburn is called gastroesophageal reflux disease (GERD). Most people with this problem eat too much spicy food or have irregular eating hours due to busyness. Many years ago, I had this problem after my eldest was born. Thank God for wisdom to apply some of these remedies in my daily diet and trying to eat small meals at fixed hours. Eating bland tasting food is not the solution to heartburn. I recommend you increase your consumption of foods that fight acidity because they are a healthy alternative. If you eat these foods daily, you can gradually achieve a normal pH in your stomach without any abrupt changes, but still produce the level of acidity needed to promote good digestion.

A hot cup of ginger tea with honey or molasses after each meal really helps me. Today I am sharing with you one of my favorite Keto dishes that does have a hint of spice but not spicy which really helps one’s acid reflux problem. This meal is low fat because I am using lean meat and a roasting method with an oven or air fryer. It is a wholesome low carb meal too with the roasted Mustard Yogurt Cauliflower and Toasted Pine Nut French Beans. This Mustard Turmeric Yogurt sauce that I curated is the remedy for cooking a meal suitable for people with heartburn. Mustard is full of minerals and a weak acid and contains alkaline which neutralizes the stomach acid. Yogurt has a soothing effect that helps keep stomach discomfort at bay. It also contains probiotics, a type of good bacteria found in the digestive tract that gives a boost to your immune system.
